A longer cook and a shorter prep are two different conveniences. French dip cooks on Low for about 8 hours, while Texas pulled pork calls for 10-12 hours on Low. The layered enchiladas cook on Low for 3-4 hours after the beef is browned and the layers are assembled. Choose by the time you have available, then follow the individual recipe's setting and doneness cues.
The last half hour deserves a place on the calendar, too. Potato soup needs time for its cream cheese to melt; the meatloaf gets its glaze near the end. Marry Me Chicken Soup adds pasta late, followed by spinach, cooked chicken, and cheeses. Stroganoff needs separately cooked noodles and a sour cream finish. Those small jobs are easier when they aren't a surprise.

Several recipes include make-ahead or freezer directions, but use the guidance for the dish you choose.
