I have been making this Sweet Potato and Apple Bake for years in the Fall months and for Thanksgiving, after receiving it from my friend, Amanda. I have to admit that it took me a while before I tried it because I was so attached to the traditional side dishes my family has always made. So, the first time I made it was alongside my Weeknight Oven Roasted Chicken, and it was wonderful! This is a deliciously sweet side dish that compliments your most savory dishes.

Ingredients
- 4 medium sweet potatoes peeled and thinly sliced
- 4 large apples peeled and sliced (Golden Delicious or Granny Smith)
- 2 C mini marshmallows
- ¾ C sugar
- 1 teaspoon salt
- 1 teaspoon cinnamon
- 2 T cornstarch
- ½ C water
- 4 T butter
Instructions
- Spread half of the sweet potatoes in the bottom of a greased 13x9 dish. Top with half of apples and half of marshmallows. Repeat layers. Combine sugar, salt, and cinnamon. Sprinkle over casserole. Dissolve cornstarch in water; pour over sugar mixture. Dot with butter slices; cover. Bake at 350 for 1 hour.
