Pumpkin Whoopie Pies with Cream Cheese Filling

Celebrate Fall with these Spiced Pumpkin Whoopie Pies. Sweet and tangy vanilla cream cheese filling is sandwiched between soft, cake-like spiced pumpkin cookies in this easy whoopie pie recipe.

I first ate Pumpkin Whoopie Pies when I lived in Houston back in 2011. One of my friends and neighbors made some and brought them over, and I was in love!  I love pumpkin bread and these remind me of delicious pumpkin bread with a wonderful cream cheese filling sandwiched between. 

 

Tips for making great Whoopie Pies:

  1. Make sure to leave plenty of room between spoonfuls of cookie batter so that the cake-like cookie can spread - leave about 3 inches between each!
  2. Let the cookies cool completely before filling.
  3. For a shortcut, fill whoopie pies with Marshmallow Fluff - this is a traditional method of filling for this type of cookie.

Ingredients

Scale
  • 2 cups firmly packed brown sugar
  • 1 ½ cups solid pack pumpkin puree
  • 1 cup vegetable oil
  • 2 eggs
  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1 ½ tablespoons ground cinnamon
  • 1 tablespoon pumpkin pie spice
  • 1 egg white
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract
  • 2 cups powdered sugar
  • ¼ cup shortening
  • 8 ounces cream cheese (softened)

Instructions

  1. Preheat oven to 350 degrees. Line with parchment paper.
  2. Combine the oil and brown sugar and beat until light and fluffy.
  3. Mix in the pumpkin.
  4. Add eggs, one at a time, beating well after each addition.
  5. Add the flour, salt, baking powder, baking soda, 1 teaspoon vanilla, cinnamon, and pumpkin pie spice; mix well.
  6. Drop dough by heaping teaspoons onto the parchment-lined baking sheets.
  7. Bake at 350 degrees for 10 to 12 minutes.
  8. Remove from oven and let cookies cool on the pan; set aside while making filling.
  9. <br>Filling:</br>
  10. Beat egg white and mix with the milk, 1 teaspoon vanilla and 1 cup of powdered sugar.
  11. Mix well, about 2 minutes.
  12. Beat in the shortening, softened cream cheese, and the remaining cup of powdered sugar. Beat until light and fluffy.
  13. <br></br>
  14. Make sandwiches from two cookies filled with Whoopie Pie Filling.
