This oven-roasted garlic confit is one of my favorite easy appetizer recipes because it's unfussy and always impressive. Whole garlic cloves roast low and slow in olive oil with fresh herbs until they're golden, buttery soft, and perfectly spreadable. Set the baking dish on the table, surround it with toasted baguette slices, and let everyone scoop garlic and oil onto their bread. It's rustic, simple, and guaranteed to have your guests raving after the first bite.

Let's Get to Cookin'

Prep the Oven: Preheat to 325°F.

Assemble the Dish: Add garlic cloves, rosemary, thyme, salt, black pepper, and red pepper flakes to a small oven-safe baking dish.

Add the Oil: Pour olive oil over the top until garlic is completely submerged. Switch to a smaller dish or add more oil if needed.

Slow Cook: Bake uncovered for about 45 minutes, or until the garlic is soft, golden brown, and easily spreadable.

Cool & Store: Let it cool completely, then transfer to a mason jar with the garlic and oil together.

Chef's Tips for Oven Roasted Garlic Confit

  • Use pre-peeled garlic if you hate peeling cloves-nobody's judging - I love using the big 3-pound pack from Sam's or Costco.
  • Don't skimp on oil-garlic must stay submerged during cooking and storage.
  • Watch for golden brown-not dark brown, or it'll taste bitter.
  • Freeze in ice cube trays for easy single-use portions that are perfect stirred into dressings, sauces, side dishes, like mashed potatoes, pasta, drizzled over pizza, and more.

How long does garlic confit last?
Stored in the fridge, it keeps up to 2 weeks. Freeze for longer storage.

Can I use neutral oil instead of olive oil?
Yes, avocado or grapeseed oil works, but you'll lose that extra-virgin flavor.

Is garlic confit safe to store?
Yes-just keep it refrigerated and fully submerged in oil.

Can I add other herbs?
Absolutely. Try sage, bay leaves, or even a hint of chili.

Leftovers & Storage

Keep garlic confit in a mason jar or other airtight container, fully covered with oil, in the fridge for up to 2 weeks. For longer storage, freeze in ice cube trays, then transfer to freezer bags. Reheat gently, or just spread cold cloves straight onto warm bread.

Ingredients

  • 4 heaping cups garlic cloves or ten heads, peeled
  • 3 cups olive oil
  • 4 sprigs fresh rosemary
  • 4 sprigs fresh thyme
  • 1 teaspoon kosher salt to taste
  • ½ teaspoon freshly cracked black pepper to taste
  • ½ teaspoon crushed red pepper flakes to taste

Instructions

  • Preheat the oven to 325F.
  • Place the garlic cloves, herbs, salt, black pepper, and crushed red pepper flakes into an oven-safe baking dish. Pour the oil on top. The garlic should be at completely submerged in oil. If it's not switch to a smaller baking dish or add more oil.
    4 heaping cups garlic cloves, 3 cups olive oil, 4 sprigs fresh rosemary, 4 sprigs fresh thyme, 1 teaspoon kosher salt, ½ teaspoon freshly cracked black pepper, ½ teaspoon crushed red pepper flakes
  • Bake the garlic uncovered, for 45 minutes or until the cloves are soft and golden in color.
  • Let cool completely before serving or storing.

Notes

Serve with toasted baguette slices
Ingredient Notes:
  • This is one of my favorite quick and easy appetizers, but peeling garlic is one of my least favorite tasks! I am all for using store bought pre-peeled garlic cloves for garlic confit. Sam's, Costco, HEB, and Whole Foods sell big packs in their refrigerated section that's super-convenient to use.
