Buffalo Chicken Dip

This buffalo chicken dip hits that classic buffalo flavor sweet spot: tangy heat, creamy body, and a cheesy top that pulls in strings when you scoop it. Chuy's Jalapeno Ranch

Back in the late '80s and early '90s, my family had a standing tradition of heading to the original Chuy's restaurant off Barton Springs Road in Austin. How to Choose Dips for Your Crowd

Start with one warm, substantial dip, one chilled dip, and one salsa. That gives people a choice of textures and flavors while keeping you from juggling several hot dishes at kickoff. For a simple menu, pair the buffalo chicken option with onion dip and fresh salsa. For a Tex-Mex spread, choose a queso, jalapeño ranch, and the layered cups.

Check each recipe's yield before making your shopping list. A dip served beside sandwiches and other appetizers stretches differently from a dip that is doing most of the work for dinner. For more guests, plan additional batches based on those yields; don't assume a deeper baking dish will cook in the same time.

What to Serve with Game Day Dips

Match your dippers to the thickness of the dip. Tortilla chips suit queso and salsa, ridged potato chips hold onion dip well, and crackers or celery make good partners for pimento cheese. Thick baked dips need a scoop that can stand up to them; flimsy chips tend to leave souvenirs in the bowl.

For a homemade addition, try my Homemade Tortilla Chips. Set out vegetables and crackers in separate bowls so guests can mix and match. If you want another substantial appetizer, Grape Jelly Meatballs add a sweet-and-tangy option alongside the savory dips.

What Can You Make Before Game Day?

Several of these recipes let you move the prep to the day before. The jalapeño ranch and pimento cheese include overnight prep guidance, the layered dip cups can be assembled ahead, and the buffalo chicken and spinach-artichoke recipes explain how to refrigerate them before baking. Follow the individual recipe for its storage and finishing instructions.

  • The day before: Make your chosen chilled dip, prep any baked dip with supported make-ahead directions, and check that the serving dishes fit in the refrigerator.
  • Before guests arrive: Start hot dips according to their own cooking times. Easy prep doesn't always mean a short cook time, especially with slow cooker queso.
  • Just before serving: Stir chilled dips, set out the first portions, and put chips and vegetables beside the dips they suit. Keep extra portions refrigerated until needed.

Keep the Dips Scoopable Through the Game

Gentle heat helps queso stay smooth. Follow the recipe's warming instructions, stir occasionally, and avoid turning up the heat just because the dip has thickened. For spinach-artichoke dip, draining the spinach well before mixing helps prevent a watery result; for fresh salsa, remove the wet tomato seed pulp before chopping.

For a long watch party, use small serving bowls and replenish with fresh portions. Hold hot perishable dips at 140°F or above and cold ones at 40°F or below, checking with a food thermometer. Discard perishable dips left without temperature control for more than two hours, or one hour when it's above 90°F. See the USDA's serving-temperature guidance for details.
