Easy Frozen Peach Bellinis on Jennifer Cooks

My first encounter with a peach bellini was back in the 90s at Birroperetti's in Houston. It was right around the corner from where I attended culinary school, and I still remember the first sip of that classic cocktail – a mind-blowing burst of sweet peaches and sparkling wine that instantly hooked me. I couldn’t get enough of the peach flavor, so I decided to concoct my own peach bellini recipe at home.

This simple recipe will earn you rave reviews and is especially perfect for those sweltering summer months. I love serving these by the pool, often in skinny insulated tumblers to keep them frosty for longer.

The Ingredients Make the Magic

The beauty of this peach bellini recipe lies in its simplicity. With just four simple ingredients – frozen peaches, Peach Schnapps, granulated sugar, and Prosecco – you can whip up this frozen drink in no time. The frozen peaches act as the ice, ensuring that your drink stays slushy and refreshing without watering down the peach flavor. This is an easy recipe that anyone can master, making it the perfect cocktail for summer parties and Sunday brunches alike.

A Celebration of Peach Season

There’s something magical about peach season. Fresh peaches, ripe and bursting with flavor, make their way into our kitchens, begging to be turned into something delicious.

This frozen twist on the traditional bellini cocktail is a celebration of those sweet peaches. Whether you’re using white peaches or the classic yellow variety, the result is a drink that captures the essence of summer in every sip.

Variations to Try

While this frozen peach bellini is perfect as it is, don’t be afraid to get creative. Try swapping the Peach Schnapps for peach liqueur or adding a splash of ginger ale for a bit of fizz.

You can also experiment with different sweeteners – simple syrup or white sugar both work well. If you’re feeling adventurous, try using fresh fruit like strawberries or raspberries to create your own unique frozen fusion mixture. The possibilities are endless!

Real bartenders have a few tricks up their sleeves to make this Frozen Peach Bellini recipe even better:

  1. High-Quality Ingredients: Always use high-quality Prosecco and Peach Schnapps. The better the base ingredients, the better the final drink.
  2. Freshness is Key: If possible, use fresh, ripe peaches for garnish and even in the blend if you can freeze them ahead of time. Fresh fruit can add a more vibrant flavor.
  3. Proper Blending: To achieve the perfect texture, start blending on a lower speed to break down the frozen peaches gradually before switching to a higher speed. This ensures a smoother blend without overworking the blender.
  4. Chill Everything: Ensure all ingredients, especially the Prosecco and glasses, are well-chilled before making the drink. This helps maintain the slushy consistency longer.
  5. Adjust Sweetness: Taste as you blend and adjust the sweetness accordingly. Depending on the sweetness of the peaches and your personal preference, you might need more or less sugar.
  6. Add a Twist: Some bartenders like to add a splash of ginger ale or soda water for a bit of extra fizz and complexity.
  7. Garnish with Care: A sprig of fresh mint and a perfectly sliced peach wedge can make a big difference in presentation. Gently slap the mint before garnishing to release its aromatic oils.
  8. Serve Immediately: Serve the drink immediately after blending to keep the slushy texture intact. If you need to make it ahead, store it in the freezer and blend again briefly before serving.

Can I Make This in Advance?

Frozen Peach Bellinis are best when they are served fresh, right after blending. However, if you're planning ahead for a party, you can turn this into a granita – which is essentially a frozen, boozy slushy.

Prepare it as usual, then pour the mixture into a shallow 13×9 baking dish. Cover with plastic wrap and freeze it, scraping and stirring with a fork every hour until it is nice and slushy.

This method keeps it slushy, and it will last for several months. If you plan on keeping this in your freezer a while, make sure to keep it tightly covered – after it is slushy, keep it in an airtight freezer container to keep any unwanted freezer odors out.

What's the Difference Between a Mimosa and a Peach Bellini?

Ah, the age-old brunch question. While both drinks share a sparkling wine base, the mimosa is a mix of orange juice and champagne, whereas a Peach Bellini uses Prosecco and peach purée.
