Picture this: It's a scorching afternoon, and you’re sprawled out on an old wooden rocker, the kind that creaks with every sway. Your only companions are the cicadas serenading in the trees and a trusty mason jar filled with a concoction so cool and crisp it could put an icebox to shame. That, my friends, is what this mojito is all about.

Watermelon and cucumber are summer's dynamic duo—one sweet and juicy, the other crisp and refreshing. When they team up with the zing of lime, the cool kiss of mint, and the subtle warmth of rum, magic happens. Trust me, it's like Texas sunshine in a glass. This drink captures the thirst-quenching taste of a mojito, one of the oldest mixed drinks celebrated by folks like author Ernest Hemingway.

This past Father’s Day weekend we celebrated all the wonderful men in our lives with a good old-fashioned Hamburger and Hot Dog cookout by the pool. I put my husband Quinton right to work, grilling up all kinds of goodies while I stayed cool in the air conditioning, serving our guests these thirst-quenching Cucumber Watermelon Mojitos.

Y'all, when I say these drinks were a hit, I mean it! Everyone raved about them, and I found myself making pitcher after pitcher. The mojitos were the perfect beverage on a hot summer day, cutting through the summer heat like a cool breeze. Seeing the smiles on everyone’s faces as they sipped their drinks made all the effort worthwhile.

It was one of those perfect days where laughter was as plentiful as the sunshine, and the company was even better than the food—though Quinton’s grilling was top-notch, as always. Celebrating all our dads with family, friends, and a glass of mojito in hand was a memory I’ll cherish forever.

Ingredients You'll Need

Let's talk about what you'll need to create this refreshing cocktail. Gather up:

  • 12 cups of fresh watermelon, cubed and deseeded (straight from the garden, if you’re lucky)
  • 1 English cucumber, sliced (the crunchier, the better)
  • ½ cup of fresh mint leaves (nothing says summer like mint)
  • ½ cup fresh lime juice (fresh is always best)
  • 2 limes, sliced into wheels (the zestier, the merrier)
  • ⅔ cup of simple syrup (or a bit more if you’ve got a sweet tooth)
  • 1 cup of classic rum (go on, be generous, Bacardi Rum Company knows what they’re doing)
  • Club soda or ginger ale (to top it all off)
  • Ice (as much as your glass can hold)
  • Watermelon triangles, Lime wheels, Mint sprigs, for garnish

Equipment Used

  • High-powered blender: For pureeing the watermelon and cucumber.
  • Fine mesh sieve: To strain the puree and ensure a smooth juice.
  • Large pitcher: For mixing and refrigerating the mojito.
  • Wooden spoon: For stirring the ingredients together. I really like this wooden Spurtle – perfect for stirring narrow pitchers!
  • Citrus juicer: To extract fresh lime juice.
  • Measuring cups: To measure the ingredients accurately.
  • Chef Knife and cutting board: For slicing the watermelon, cucumber, and limes.
  • Ice cube tray or ice maker: To provide plenty of ice for serving. Check out this fantastic countertop ice maker! Elevate your cocktail-making game with plenty of crystal-clear ice cubes!
  • Cocktail glasses or tall glasses: For serving the mojitos.
  • Muddler (optional): If you prefer to muddle the mint instead of blending it.

The Art of Crafting

Now, creating this mojito is as easy as a lazy summer day. Here’s how you do it:

  1. Blend the Magic: Using a high-powered blender, puree the watermelon chunks and cucumber together until smooth.
  2. Strain for Smoothness: Strain the puree using a fine mesh sieve, setting the watermelon juice aside and discarding the pulp.
  3. Mix in the Good Stuff: Return the juice to a clean blender and add the fresh lime juice and mint leaves. Pulse a few times to mince the mint but do not puree.
  4. Strain Again: Strain the mixture into a large pitcher to ensure it's perfectly smooth.
  5. Add the Kick: Add the classic rum and simple syrup to the pitcher and stir to combine.
  6. Chill Out: Cover the pitcher and refrigerate until you're ready to serve.
  7. Final Touches: Right before serving, stir in the club soda or ginger ale and half of the cucumber wheels.
  8. Serve with Style: Pour the mojito over ice-filled glasses and garnish with watermelon triangles and mint sprigs, if you’re feeling fancy.

A Toast to Texas Summers

Take a sip, close your eyes, and let the flavors transport you to those idyllic summer days. The sweetness of the watermelon mingles with the crisp cucumber, the mint adds a refreshing burst, and the lime ties it all together with a citrusy bow. It’s like a Texas summer day distilled into a single, glorious glass.

This drink isn’t just about quenching your thirst; it’s about savoring those precious moments that make life sweet. As you sip your mojito, maybe you'll recall your own sun-drenched memories—whether it’s catching fireflies at dusk or sharing tall tales around a campfire.

So, here's to the simple pleasures, the lazy days, and the unforgettable flavors of summer. Cheers, y'all!

Can you make Mojitos ahead of time?

  • Absolutely! You can definitely make these mojitos ahead of time. Just follow the recipe up to the point where you add the club soda or ginger ale. Mix everything else together and keep it chilled in the refrigerator. When you’re ready to serve, stir in the fizzy stuff, garnish with a couple of slices of cucumber, watermelon triangles, and a sprig of mint. This way, you’ll have a refreshing cocktail ready to go, perfect for those hot summer days or any fun gathering.

How long do Mojitos keep?

  • Leftover Cucumber Watermelon Mojitos can be stored in the refrigerator for up to two days. Just make sure to keep the mixture in an airtight container or covered pitcher to maintain its freshness. Before serving again, give it a good stir and add fresh club soda or ginger ale for that fizzy kick.
