Instructions

  • Using a high powered blender, puree watermelon and cucumber together.
  • Strain using a fine mesh strainer set juice aside and discard pulp.
  • Return juice to clean blender and add fresh lime juice and mint leaves.
  • Pulse a few times to mince the mint but do not puree.
  • Strain into a large pitcher.
  • Add rum and simple syrup and stir to combine.
  • Cover pitcher and refrigerate until ready to use.
  • Right before serving, stir in club soda and ½ sliced cucumber.
  • Pour over ice-filled glasses.
  • Garnish with watermelon wedges and mint sprigs, if desired
