  • Bleu cheese (Point Reyes is my favorite for eating and serving on charcuterie boards, Maytag is another great choice.)

  • Prepare the Bread: Start by preheating your oven broiler, setting the rack in the middle-top position, about 7 inches from the broiler. Using a small round cookie cutter, cut out rounds from each slice of cranberry-pistachio bread. Arrange the rounds on a baking sheet and brush the tops with a bit of olive oil. Broil them for about 2-3 minutes until they’re browned. Flip the bread rounds and broil the other side until they reach a light golden brown. Once they’re ready, set them aside.

  • Cook the Bacon: While the bread is toasting, dice your bacon slices into small pieces. Heat a medium skillet over medium-high heat and fry the bacon until it’s nice and crispy. Once done, remove the bacon from the skillet and place it on a paper towel-lined plate to drain off the excess fat.

  • Assemble the Crostini: Preheat your oven to 350°F. Spread a small amount of fig jam on each toasted bread round, and place them on a parchment paper-lined baking sheet. Top each piece with a generous helping of bacon and crumbled bleu cheese.
  • Bake and Serve: Place the baking sheet in the oven and let the crostini bake for about 6 to 8 minutes, just until everything is warmed through and the cheese starts to melt slightly.   • 4 slices cranberry-pistachio bread
  • 2 tablespoons olive oil

  • 6 slices bacon diced
  • 3 ounces blue cheese
  • 2 tablespoons chives minced

  • Preheat oven broiler with rack in middle-top position (about 7 inches from broiler).
  • Using a small round cookie cutter about 2 ½ inches in diameter, cut bread rounds from each slice of bread.
  • Arrange bread rounds on a baking sheet. Brush the tops with 1 tbsp. olive oil and broil about 2-3 minutes until browned.
  • Remove pan from the oven and flip the bread rounds.
  • Return the pan to the broiler and toast the other side to a light golden brown.
  • Remove from oven and set aside.
  • Remove bacon slices and cut them into a small dice.
  • place a medium skillet over medium-high heat and fry the bacon bits until crispy.
  • Remove bacon to a papery towel-lined plate and set aside.
  • Preheat oven to 350 degrees.
  • Spread ½ teaspoon of fig jam on each piece of toasted bread.
  • Place onto parchment paper-lined baking sheet.
  • Top each piece with bacon and blue cheese.
  • Place in oven for 6 to 8 minutes or until warmed.
  • Remove from oven and carefully place on serving plates.
  • Garnish with minced chives and serve.
