Instructions

  • Preheat oven broiler with rack in middle-top position (about 7 inches from broiler).
  • Using a small round cookie cutter about 2 ½ inches in diameter, cut bread rounds from each slice of bread.
  • Arrange bread rounds on a baking sheet. Brush the tops with 1 tbsp. olive oil and broil about 2-3 minutes until browned.
  • Remove pan from the oven and flip the bread rounds.
  • Return the pan to the broiler and toast the other side to a light golden brown.
  • Remove from oven and set aside.
  • Remove bacon slices and cut them into a small dice.
  • place a medium skillet over medium-high heat and fry the bacon bits until crispy.
  • Remove bacon to a papery towel-lined plate and set aside.
  • Preheat oven to 350 degrees.
  • Spread ½ teaspoon of fig jam on each piece of toasted bread.
  • Place onto parchment paper-lined baking sheet.
  • Top each piece with bacon and blue cheese.
  • Place in oven for 6 to 8 minutes or until warmed.
  • Remove from oven and carefully place on serving plates.
  • Garnish with minced chives and serve.
