The Gist

  • Cook Time: None
  • Total Time: 4 hours 30 minutes (includes chilling)
  • Yield: Serves 12
  • Skill Level: Easy
  • Dietary Notes: Vegetarian

Why You'll Love It

  • Built on everyday pantry staples like Oreo cookies and cocoa powder
  • No baking-your oven stays as cool as a Texas iced tea
  • Layers of rich chocolate, cream cheese, and Baileys whipped cream make every bite a little party
  • Easy to prep ahead, so you can spend time with guests instead of fussing in the kitchen

This no-bake cheesecake trifle is one of those indulgent desserts that looks like you worked all afternoon, but really takes little effort. It's stacked with crushed Oreo cookies soaked in espresso, a creamy chocolate cheesecake mixture, and clouds of Baileys whipped cream, all crowned with a scatter of toffee bits. The result? A stunning dessert that's as rich and layered as a family story told around the supper table.

Equipment You'll Need

  • Trifle Bowl or Glass Dish - Lets those pretty layers shine through
  • Mixing Bowls - At least two; one for cheesecake, one for whipped cream
  • Hand or Stand Mixer - Whips cream into stiff peaks without breaking a sweat
  • Rubber Spatula - Scrapes every last bit of creamy chocolate goodness

Gather Your Ingredients

  • Oreo Cookies - Crushed into rustic chunks for layers with bite
  • Espresso or Strong Coffee - Deepens the chocolate flavor and balances the sweetness
  • Cream Cheese - Softened, for a smooth cheesecake mixture
  • Granulated Sugar - Sweetens the base without overpowering
  • Cocoa Powder - Adds rich chocolate notes; use unsweetened
  • Baileys Irish Cream - The star flavor, lending creaminess and a hint of warmth
  • Vanilla Extract - Rounds out the chocolate and Baileys
  • Kosher Salt - Just a pinch to sharpen flavors
  • Heavy Whipping Cream - Whips up into dreamy soft peaks
  • Powdered Sugar - Sweetens and stabilizes the whipped cream
  • Heath Bits or Toffee Pieces - Sprinkle on top for crunch and shine

Let's Get to Cookin'

Prep the Coffee Drizzle

Stir together espresso and sugar until dissolved, then let it cool. This drizzle will soak into those Oreo crumbs like rain on dry Texas dirt.

Make the Oreo Crumbles

Break the Oreos into rough chunks-think bite-sized, not dust. Toss half with the cooled espresso mixture.

Mix the Cheesecake Filling

Beat cream cheese and sugar until smooth. Blend in cocoa powder, then Baileys, vanilla, and salt until creamy and luscious.

Whip the Cream

In another bowl, whip heavy cream, Baileys, cocoa powder, powdered sugar, and vanilla until stiff peaks form.

Layer the Trifle

In your trifle dish, add:

  • Half of the espresso-soaked Oreos
  • Half the cheesecake mixture
  • Half the whipped cream
  • Half the toffee bits

Repeat once more, finishing with whipped cream and a crown of Heath bits.

Chill & Serve

Cover and refrigerate for at least 4 hours. Slice big spoonfuls straight down so everyone gets a taste of all the layers.

Chef's Tips for No-Bake Baileys Chocolate Cheesecake Trifle

  • Chill the bowl and beaters - Cold tools make the whipped cream hold stiff peaks.
  • Don't pulverize the Oreos - Keep them chunky for texture.
  • Let it rest overnight - Flavors deepen, and the layers hold together beautifully.
  • Use good cocoa powder - It makes the chocolate flavor shine instead of fade into the background.

FAQs

Can I make this trifle ahead of time?
Yes, assemble it a day before serving. Just keep it covered in the fridge.

Can I freeze this dessert?
No, freezing ruins the whipped cream texture. Enjoy it fresh from the fridge.

Can I substitute another liqueur for Baileys?
Absolutely. Kahlúa or Frangelico work nicely, or use strong coffee if you'd rather skip alcohol.

What if I don't have a trifle dish?
A large glass bowl works fine, or portion into clear cups for individual servings.

Leftovers & Storage

  • Store covered in the fridge up to 3 days
  • The whipped cream will start to soften after day 2, but the flavor's still rich and satisfying
  • This one doesn't freeze well, so plan on eating it fresh (not usually a problem with a dessert this good)
