Ingredients

Oreo Crumbles

  • 1 (1-pound) Family Size package Oreos broken into chunks
  • ½ cup espresso or strong coffee

Prepare espresso drizzle

  • Combine espresso and 2 tablespoons sugar until dissolved. Let cool.
    ½ cup espresso

Prepare the Oreo Crumbles

  • Break Oreos into large bite-sized pieces. Set aside.
    1 (1-pound) Family Size package Oreos

Make the Cheesecake Filling

  • In a large mixing bowl, beat cream cheese and sugar until smooth.
    16 ounces cream cheese, ½ cup granulated sugar
  • Add cocoa powder and mix until fully incorporated.
    4 tablespoons unsweetened cocoa powder
  • Blend in Baileys, vanilla, and salt until smooth and creamy, 3 minutes. Set aside.
    ¼ cup Baileys Irish Cream, 1 teaspoon vanilla extract, ⅛ teaspoon kosher salt

Make the Whipped Cream

  • In a separate mixing bowl, combine heavy cream, Baileys, cocoa powder, powdered sugar, and vanilla.
    2 cups heavy whipping cream, ¼ cup Baileys Irish Cream, 4 tablespoons unsweetened cocoa powder, ¼ cup powdered sugar, 1 teaspoon vanilla extract
  • Beat on high speed until stiff peaks form.

Assemble the Trifle

  • In a large trifle dish or glass bowl, layer as follows:

One-half of the Oreo crumbles

  • Drizzled with ½ of espresso mixture (I toss these together in a separate bowl before adding the espresso-soaked cookies to the layer)
  • One-half of the cheesecake filling
  • One-half of the whipped cream
  • One-half of the Heath bits
  • Repeat the layers two more times in the same order.
  • Finish with whipped cream or a swirl of stabilized whipped cream and a generous sprinkle of Heath bits on top.

Chill and Serve

  • Cover and refrigerate for at least 4 hours before serving.
  • Best enjoyed within 2–3 days.

Notes

Substitutions
•Replace Baileys with Kahlúa, Frangelico, or strong brewed coffee for a different flavor twist.
•Use chocolate or vanilla pudding instead of cheesecake filling for a lighter version.
•Swap Heath bits with chopped toffee bars, mini chocolate chips, or crushed chocolate-covered espresso beans.
