Sauteed Brussels Sprouts with Crisp Bacon

Do you like Brussels Sprouts? If the last one's you tried were boiled and served up when you were a kid - give these crispy, bacon clad Brussels Sprouts a try!
 
Sometimes I get in a rut with vegetable sides to serve alongside meals.  So from time to time, I leave the can 'o green beans in the pantry and head for more exotic...like Brussels Sprouts.
 
 I know.
 
I used to hate them too.
 
I've grown a little in my tastes over the years...plus if you fry up a little bacon you can just about make anything taste good!
 
For this recipe, I used frozen whole Brussels Sprouts.  I figured they already did the blanching for me, so that's one step I don't have to do.  Just let them thaw and pour them out onto several layers of paper towels and pat them lightly to absorb any remaining moisture.

Ingredients

Scale
  • 1 16 oz bags frozen Brussels Sprouts
  • 2 strips bacon (diced)
  • salt and pepper (to taste)

Instructions

  1. Thaw sprouts and pat dry with paper towels. Slice each one in half; set aside.
  2. Brown bacon in medium skillet. Once brown, remove with a slotted spoon onto a paper towel-lined plate; set aside.
  3. Place sprouts in skillet with bacon drippings and saute over medium-high heat, shaking pan occasionally to toss.
  4. Season with salt and pepper to taste. Add bacon pieces, toss and serve warm.
