I am so excited about this recipe, y’all! I was hesitant about combining a strawberry salsa with shrimp, but let me tell you it more than worked well ~ it was fantastic! These Shrimp Tacos were so quick and easy, I whipped them up in 20 minutes for lunch this week. The slightly sweet, tart flavor of the strawberries mixes very well with red onion and fresh jalapeño. I added fresh sliced avocado to the tacos to give them a cool creaminess that complimented the sharpness of the salsa.
Don’t you just love the beautiful colors? I do. I’m telling you, make these for a fun, casual get together with cold drinks and good friends and it’ll be a hit! The salsa is great with tortilla chips for dipping, so make extra! I hope you enjoy!
