Creamy Espresso Martini with Baileys

Jump to Recipe·Print Recipe
Close-up frothy Baileys espresso martini with grated dark chocolate and coffee beans. this …

This Baileys espresso martini is a creamy coffee cocktail made with vodka, Baileys Irish Cream, Kahlúa, cooled espresso, simple syrup, and half-and-half. A hard 20-second shake gives it a cold, frothy top, while finely grated dark chocolate turns the rim into the best part of the glass.

What Is a Baileys Espresso Martini?

A Baileys espresso martini is a creamy variation of the classic vodka, espresso, and coffee-liqueur cocktail. Baileys and half-and-half soften the coffee's edge, Kahlúa reinforces the roasted flavor, and vigorous shaking with ice creates the drink's signature chill and foam.

Why You'll Love This Recipe

  • Rich but balanced: espresso keeps the Irish cream and simple syrup from tasting flat.
  • Made for two: one shaker makes two generous cocktails in about five minutes.
  • No specialty coffee required: strong brewed coffee works when an espresso machine is not handy.
  • Dinner-party finish: the dark-chocolate rim looks polished without fussy bartending.

Recipe At a Glance

  • Flavor: bold coffee, vanilla-cocoa Irish cream, and dark chocolate
  • Texture: cold, creamy, and frothy
  • Difficulty: easy
  • Prep time: 5 minutes
  • Make-ahead: cool the coffee and grate the chocolate ahead; shake just before serving
  • Freezer-friendly: no
  • Best occasions: after dinner, date night, Christmas, New Year's Eve, and cocktail hour

Where This Cocktail Comes From

The classic espresso martini combines vodka, espresso, coffee liqueur, and sweetness. This version leans into the dessert-cocktail side with Baileys and half-and-half, then adds a dark-chocolate rim that echoes the coffee and cocoa notes without changing the tested drink.

Ingredients You'll Need

Measured ingredients and tools for creamy Baileys espresso martinis.
  • Ketel One vodka: a clean base that lets the coffee and Irish cream lead.
  • Baileys Irish Cream liqueur: brings cream, cocoa, vanilla, and whiskey notes.
  • Kahlúa coffee liqueur: deepens the roasted coffee flavor and sweetness.
  • Simple syrup: rounds out espresso's bitterness.
  • Half-and-half: gives the cocktail its silky, creamy body.
  • Cooled espresso or strong brewed coffee: supplies the bold coffee backbone without melting the shaker ice.
  • Dark chocolate and whole coffee beans: finish the rim and frothy top.

How to Make a Creamy Espresso Martini

1. Grate the chocolate

Use a microplane to finely grate 1 ounce dark chocolate onto a small saucer. Fine shavings cling to the glass more evenly than coarse curls.

2. Rim the glasses

Lightly brush the rims of two cocktail glasses with simple syrup, then dip the rims into the chocolate shavings. Use a thin coat of syrup so the chocolate stays on the rim instead of sliding down the glass.

3. Fill the shaker

Add 2 ounces vodka, 1½ ounces Baileys, 1½ ounces Kahlúa, 1 ounce simple syrup, 1 ounce half-and-half, and ½ cup cooled espresso to a cocktail shaker filled with ice.

4. Shake, strain, and garnish

Secure the lid and shake hard for about 20 seconds, until the shaker feels very cold and the drink is frothy. Strain into the prepared glasses, then garnish with additional chocolate shavings and 3 coffee beans per glass. Serve immediately.

Helpful Tips Before You Start

  • Cool the espresso to room temperature before it touches the ice; hot coffee dilutes the drink quickly.
  • Fill the shaker generously with ice so the cocktail chills fast instead of sitting in meltwater.
  • Shake harder than you think you need to. The agitation chills the drink and aerates the creamy mixture.
  • Chill the glasses while the coffee cools for an extra-cold first sip.

A Few Easy Mistakes to Avoid

The biggest mistakes are using hot coffee, over-wetting the rim, and giving the shaker a timid shake. Hot coffee melts the ice, too much syrup makes the chocolate slide, and a short shake leaves the drink flat instead of frothy.

A Few Things That Make It Better

Fresh espresso gives the most concentrated coffee flavor, but strong brewed coffee is perfectly workable when it is fully cooled. Finely grated dark chocolate matters, too: it melts delicately on the rim instead of feeling chunky.

Keeping Leftovers Fresh

This cocktail is best immediately after shaking. If you have leftover unshaken mixture, refrigerate it in a sealed container for up to 24 hours, then shake a serving with fresh ice. Do not store a finished, foamed cocktail and expect the froth to hold.

Can You Make It Ahead?

You can cool the espresso, grate the chocolate, and measure the liquid ingredients several hours ahead. Refrigerate the liquid mixture, but wait to add ice and shake until just before serving so the drink stays cold and frothy.

What to Serve with It

Serve this rich coffee cocktail after dinner with chocolate truffles, flourless chocolate cake, or a small cheese board. For another elegant cocktail, try my Elderflower Lychee Martini, Lemon Drop Martini, or French Martini.

FAQs

Can I make a Baileys espresso martini without an espresso machine?

Yes. Use ½ cup very strong brewed coffee, cooled to room temperature. The finished drink will be a little less concentrated than one made with espresso, but the coffee flavor still holds up.

Why is my espresso martini not frothy?

An espresso martini usually lacks froth when it is not shaken hard or long enough. Fill the shaker with ice, seal it well, and shake vigorously for about 20 seconds before straining immediately.

Should espresso be hot or cold for an espresso martini?

Espresso should be cooled to room temperature for this recipe. Hot espresso melts the ice too quickly, which can water down the cocktail before it is properly chilled.

Can I leave out the half-and-half?

The half-and-half is part of this tested creamy version, so leaving it out changes the body and balance. For the intended result, use the full 1 ounce.
