Blackberry Cobbler

I love cobbler!  Summertime is full of fresh fruits and there's nothin' better than an ooey gooey warm cobbler made from fresh berries or peaches and a dollop of fresh whipped cream or cold vanilla ice cream!  This cobbler is made from our fresh blackberries...picked daily, by my daughter, Lexie!

Blackberry or Peach Cobbler

Step 1:

1 stick butter, melted
1 cup Bisquick baking mix
1 cup sugar
⅔ cup milk

Preheat oven to 350 degrees. Grease a 9x13 baking dish. Combine step 1 ingredients, mixing well (mixture will be a little lumpy) and pour into greased dish.

Step 2:

4 cups fresh blackberries or 8 fresh peaches, peeled, pitted & sliced
(~ you may sub. ~ 1 large can sliced peaches in heavy syrup, adding cinnamon only - no sugar)

½ cup sugar
1 teaspoon cinnamon

Combine fresh berries or peaches with sugar and cinnamon. Allow to sit for 10-15 minutes or until sugar is mostly dissolved and fruit is releasing its juice. Stir occasionally. Spoon fruit and juice over batter in the baking dish.

Step 3:

½ cup sugar
1 teaspoon cinnamon

Combine sugar and cinnamon and sprinkle evenly over peaches and batter.

Bake at 350 degrees for 45 minutes or until golden brown.
