How to Freeze Garlic

It's not a tumor!  (Name that movie!)  
 
And no, it's not cauliflower...
 
It's garlic!!!
Those who know me well know that I'm the self proclaimed garlic queen.  The supreme lover of the stinkin' rose!  
{OK, I got a little dramatic there.}  
 
But I do love garlic and use it a lot.  
 
I was in Sams Club the other day and saw it again.  The HUGE jug of fresh peeled garlic in the refrigerated section of the produce department.  I have pulled myself away from the display before, but this time, it sucked me in and I bought the monstrosity.
 
This guy, right here...he's the culprit.  Look at all those cloves of garlic!   What's a girl to do?
 
Here's what I did...
 
I froze it!
 
 Working in batches, pour ½ the container of peeled garlic cloves into food processor with about ½ cup olive oil.  Process until desired consistency.  Line a baking sheet with waxed paper or foil and spoon out piles of chopped garlic.  Pop into the freezer until frozen hard, then pop off of sheet into a ziploc freezer bag.  For extra insurance, I put that bag into another and seal it.  Make sure to label your glorious garlic! 
 
It has worked out great!  All I have to do is reach into my freezer and grab that bag of chopped garlic, get the amount I need and toss it into my recipe!  It's AWESOME!  If you need to mix it into a spread or butter, or if using it fresh, just put a lump of it in a bowl and microwave it for 10 to 20 seconds or until it is just thawed, then stir it right into your recipe.  If sauteing with it, just drop it into the pan and saute it directly in.  It will melt right in...it's great!
 
So your house smells like garlic for a few days...I can think of worse smells!
