This Frozen Peach Bellini Recipe blends sweet frozen peaches, peach schnapps, and bubbly Prosecco into a smooth, refreshing cocktail that's ready in just 5 minutes.

2 (16-ounce) bags frozen peach slices (about 6 cups)
1 cup peach schnapps
1/3 cup granulated sugar
1 (750 ml) bottle Prosecco or other dry sparkling white wine
1 fresh peach, sliced, for garnish (optional)
Fresh mint sprigs, for garnish (optional)

Instructions

Prep

  • Measure all ingredients.
  • Slice the fresh peach for garnish, if using.

Assemble

  • Add half of the frozen peaches, the peach schnapps, sugar, and about half of the sparkling wine to a high-powered blender.
  • Blend until smooth. If the mixture is too thick to blend easily, pour in a little more sparkling wine.
  • With the blender running, gradually add the remaining frozen peaches until fully incorporated.
  • Pour in the rest of the sparkling wine and blend just until the mixture is smooth and evenly mixed.
  • Divide among champagne flutes, stemless wine glasses, or cocktail glasses.
  • Garnish with fresh peach slices and mint, if desired, and serve immediately.
