Prepare the Spice Rub

  • In a small bowl, whisk together the chipotle chili powder, brown sugar, cumin, seasoned salt, and black pepper.

Season the Shrimp

  • Place the shrimp in a separate large bowl.

  • Add olive oil and garlic; toss to coat evenly.

  • Sprinkle the spice mixture over the shrimp and stir well until thoroughly coated.
  • Set aside while the grill heats.

Skewer the Shrimp

  • Thread shrimp onto skewers, using two parallel wood skewers per row or one metal twist skewer to make turning easier during grilling.

Grill the Shrimp

  • Preheat the grill to medium-high heat.
  • Place skewered shrimp on the grill.
  • Cook 2 to 3 minutes per side, or until shrimp are opaque and cooked through.

Substitutions
•Shrimp: Can substitute medium shrimp (21–25 count) but adjust cook time to 1–2 minutes per side.
•Seasoned Salt: Use regular kosher salt plus ½ teaspoon paprika for a homemade replacement.
