Creamy BBQ Bacon Pasta Salad is packed with crispy bacon, sharp Cheddar, sweet corn, and crisp vegetables tossed in a smoky barbecue dressing. It's an easy make-ahead side for cookouts and potlucks.

Pasta Salad

1 pound cavatappi pasta
1 (12-ounce) package thick-cut bacon, cooked until crisp and crumbled
2 cups frozen corn
1 red bell pepper, diced
3 celery stalks, thinly sliced
16 ounces sharp Cheddar cheese, cut into small cubes
4 green onions, thinly sliced

BBQ Dressing

1 cup mayonnaise
1/2 cup barbecue sauce
2 tablespoons apple cider vinegar
1 teaspoon hot sauce
1/2 teaspoon chili powder
1/2 teaspoon garlic powder
1/4 teaspoon cayenne pepper (optional)
1/2 teaspoon kosher salt, or to taste
1/4 teaspoon black pepper, or to taste

1/4 cup fresh parsley, minced, optional

Instructions

Prep

Cook

  • Bring a large pot of well-salted water to a boil.
  • Cook the Cavatappi pasta according to the package directions until al dente.
  • During the final minute of cooking, stir the frozen corn into the boiling water with the pasta.
  • Drain the pasta and corn, rinse under cold water to stop the cooking, and let them drain well until excess moisture has been removed.

Assemble

  • Place the cooled pasta and corn in a large serving bowl.
  • Add the crumbled bacon, bell pepper, celery, Cheddar cheese, and green onions.
  • Pour the dressing over the salad and gently fold everything together until evenly coated.
  • Taste and adjust the seasoning with additional salt and black pepper if needed.
  • Cover and refrigerate for at least 30 minutes before serving for the best flavor.
