These homestyle mashed potatoes combine fluffy russet potatoes, butter, and evaporated milk for a rich, creamy side dish that’s easy to make.

Ingredients

3 pounds russet potatoes, peeled and cut into chunks
1/2 teaspoon salt, for the cooking water
12 ounces evaporated whole milk
1/2 cup salted butter, melted
1/2 teaspoon kosher salt, to taste
1/4 teaspoon black pepper, to taste

Instructions

Prep

  • Peel the potatoes and cut them into evenly sized chunks.
  • Rinse the cut potatoes under cold water to remove excess surface starch.
  • Place the potatoes in a large pot and add enough cold water to cover them by about 1 inch.
  • Stir 2 teaspoon kosher salt into the water.

Cook

  • Bring the potatoes to a boil over medium-high heat.
  • Cook for 15 to 20 minutes, or until the potatoes are very tender and break apart easily when pierced with a fork.
  • Drain thoroughly, then return the potatoes to the warm pot.
  • Set the pot over the burner with the heat turned off for 1 to 2 minutes, gently tossing once or twice, to allow excess moisture to evaporate.
  • Warm the evaporated milk until hot but not boiling. Stir in the melted butter.

Notes

Substitutions: Yukon Gold potatoes may be used for a naturally buttery texture. Whole milk or half-and-half can replace the evaporated milk, though the finished potatoes may be slightly less rich. 

For Creamier Potatoes: Add the warm milk mixture gradually rather than all at once. Depending on the potatoes, you may not need every drop.

Mixing Tip: Avoid prolonged mixing with an electric mixer. Russet potatoes can become sticky or gummy when overworked.
