Ingredients

Scale

8 cups fresh watermelon, cut into cubes
2 cups cold water
1/2 cup granulated sugar
2 tablespoons fresh lime juice
Ice, for serving
Watermelon wedges or lime slices, optional garnish

Instructions

Prep

  • Cut the watermelon into cubes, removing any large seeds if needed.
  • Juice the lime and measure the sugar.

Blend

  • Place half of the watermelon cubes and 1 cup of the water into a blender.
  • Blend until completely smooth.
  • If using a seeded watermelon, pour the mixture through a fine-mesh strainer into a large pitcher to remove any seed pieces.
  • Repeat with the remaining watermelon and the remaining 1 cup of water, adding it to the pitcher.

Assemble

  • Stir the sugar and fresh lime juice into the watermelon mixture until the sugar has dissolved.
  • Taste and adjust the sweetness if desired by adding a little more sugar.
  • Fill serving glasses with ice and pour the agua fresca over the ice.
  • Garnish with fresh watermelon or a lime slice, if desired, and serve immediately.

Notes

Substitutions

  • Replace granulated sugar with honey, agave syrup, or a sugar substitute suitable for beverages. Adjust the amount to taste.
  • Lemon juice can be used instead of lime juice for a slightly different citrus flavor.
  • For a stronger watermelon flavor, replace part or all of the water with additional watermelon.

Serving Suggestions and Pairings

  • Serve alongside grilled chicken or fish, tacos, fajitas, enchiladas, or barbecue.
  • Pair with fresh fruit, chips and salsa, or a light summer salad.
  • Add fresh mint leaves for extra freshness if desired.

Storage

  • Store leftovers in a covered pitcher or airtight container in the refrigerator for up to 2 days.
  • Stir well before serving, as natural separation is normal.

Freezing

  • Freeze the agua fresca in freezer-safe containers for up to 2 months, leaving room for expansion.
  • Thaw overnight in the refrigerator and stir before serving.
