This Ice Cream Sandwich Cake is an easy no-bake dessert layered with ice cream sandwiches, creamy whipped topping, rich hot fudge, and crunchy Heath bits for a crowd-pleasing treat.

12 FatBoy Vanilla Ice Cream Sandwiches, unwrapped

1/2 gallon Blue Bell Cookie Two Step Ice Cream, softened until scoop-able & spreadable

1 (12-ounce) jar hot fudge ice cream topping, slightly warmed

2 (8-ounce) containers Cool Whip, thawed

1 (8-ounce) bag Heath Chocolatey Toffee Baking Bits

Prep

Assemble

  • Arrange the FatBoy Vanilla Ice Cream Sandwiches in an even layer across the bottom of the prepared baking dish, trimming one if necessary to fill any gaps.
  • Spread the softened Blue Bell Cookie Two Step Ice Cream evenly over the ice cream sandwiches.
  • Spoon the warmed hot fudge topping over the ice cream and gently spread it into an even layer.
  • Spread the thawed Cool Whip over the fudge.
  • Sprinkle the Heath Chocolatey Toffee Baking Bits evenly over the top.

Freeze

Substitutions

  • Blue Bell Cookie Two Step Ice Cream can be replaced with any favorite flavor of ice cream & topped with whatever pairs with the flavor (e.g. Mint Chocolate Chip Ice Cream topped with chopped Andes mints or chocolate chips)
  • Chocolate FatBoy Ice Cream Sandwiches may be substituted for the vanilla version.
  • Caramel ice cream topping can be used instead of hot fudge for a different flavor.
  • Chopped Heath bars can replace the Heath Chocolatey Toffee Baking Bits.

Storage

  • Cover tightly and store in the freezer for up to 1 week for the best flavor and texture.

Freezing
