Cranberry Crostini with Fig Jam, Bacon, and Bleu Cheese is the perfect holiday appetizer. A delicious blend of crispy bacon, creamy cheese, and sweet fig jam on golden brown crostini, ideal for holiday parties.

Instructions

  1. Preheat oven broiler with rack in middle-top position (about 7 inches from broiler).
  2. Using a small round cookie cutter about 2 ½ inches in diameter, cut bread rounds from each slice of bread.
  3. Arrange bread rounds on a baking sheet. Brush the tops with 1 tbsp. olive oil and broil about 2-3 minutes until browned.
  4. Remove pan from the oven and flip the bread rounds.
  5. Return the pan to the broiler and toast the other side to a light golden brown.
  6. Remove from oven and set aside.
  7. Remove bacon slices and cut them into a small dice.
  8. place a medium skillet over medium-high heat and fry the bacon bits until crispy.
  9. Remove bacon to a papery towel-lined plate and set aside.
  10. Preheat oven to 350 degrees.
  11. Spread 1/2 teaspoon of fig jam on each piece of toasted bread.
  12. Place onto parchment paper-lined baking sheet.
  13. Top each piece with bacon and blue cheese.
  14. Place in oven for 6 to 8 minutes or until warmed.
  15. Remove from oven and carefully place on serving plates.
  16. Garnish with minced chives and serve.
