Creamy Southern Potato Salad is a classic picnic and barbecue side dish made with tender potatoes, hard-boiled eggs, crunchy celery, sweet pickle relish, and a tangy, seasoned dressing. It's easy to make ahead, packed with old-fashioned flavor, and always a favorite at potlucks, cookouts, and holiday gatherings.

5 pounds Yukon Gold potatoes

1 tablespoon kosher salt, plus additional as needed

2 cups Duke's mayonnaise

1 cup Grillo's dill pickles, finely chopped

2 tablespoons yellow mustard

1 tablespoon apple cider vinegar

1 teaspoon celery seed

½ teaspoon paprika, plus extra for garnish

1 teaspoon kosher salt

½ teaspoon black pepper

6 hard-boiled eggs, chopped

3 celery stalks, finely diced

1 sweet onion, finely diced

1 tablespoon fresh dill, chopped

Fresh dill, for garnish

Instructions

Prep

  • Peel the loose skins from the hard-boiled eggs if needed and chop them into small pieces.
  • Finely dice the celery and onion.
  • Chop the dill pickles and fresh dill.
  • Cut the potatoes into large chunks of similar size.

Cook

  • Place the potatoes in a large pot and cover with cold water by about 1 inch.
  • Bring the water to a boil over high heat.
  • Add 1 tablespoon kosher salt and continue cooking until the potatoes are tender when pierced with a fork, about 13 to 15 minutes.
  • Drain thoroughly and allow the potatoes to cool just enough to handle.
  • Remove any loose potato skins if desired.
  • Cut the cooked potatoes into bite-sized pieces, approximately ½ inch. Some crumbling is fine.
