Instructions

Make the Honey-Ginger Syrup

  • Combine honey, water, and sliced or grated ginger in a saucepan.
  • Heat over high heat until the mixture comes to a boil.
  • Reduce heat to medium and simmer for 5 minutes.
  • Remove from heat and allow the mixture to steep in the refrigerator overnight.
  • Strain the syrup using cheesecloth and store in an airtight container.

Prepare the Cocktail

  • Add blended scotch, freshly squeezed lemon juice, and honey-ginger syrup to a cocktail shaker.
  • Fill the shaker with ice and shake until well-chilled.
  • Strain the mixture into a rocks glass filled with fresh ice.
  • Carefully pour the Islay single malt scotch over the back of a spoon to float it on top of the drink.
  • Garnish with a piece of candied ginger and serve.
