Prepare the Grapefruit Garnish

  • Thoroughly wash 4 grapefruits.
  • Using a Y-peeler, peel the grapefruits, aiming to get 2 long, unbroken thin peelings from each fruit.
  • Starting at one end of each peel, tightly roll it up, loosening the roll slightly as you go.
  • Once rolled, secure the end with a toothpick or cocktail pick.
  • Place the rolled peels in an airtight container and refrigerate until ready to serve.

Prepare the Grapefruit Mixture

  • In a 32-ounce pitcher, combine grapefruit juice, elderflower liqueur, and bitters.
  • Stir well until thoroughly mixed.
  • Cover and refrigerate until ready to serve.

Assemble the Cocktails

  • Stir the chilled grapefruit mixture again to ensure it’s well combined.
  • Pour 2 ½ ounces of the mixture into each champagne flute.

Finish and Garnish

  • Top each glass with chilled champagne.
  • Add a prepared grapefruit rose garnish to each flute for a stunning presentation.
