  • Preheat oven to 425°. Unroll crust into a 9-in. pie plate and blind bake to golden brown. Cool on a wire rack.
  • In a small saucepan, combine the sugar, cornstarch, water, lemon juice, and salt until smooth. Bring to a boil; cook and stir until thickened, about 2 minutes. Stir in gelatin until dissolved. Cool for about 15 minutes, stirring occasionally.
  • When gelatin mixture has cooled to lukewarm, gently fold in the strawberries.
  • Pour into cooled pie shell and arrange evenly. Refrigerate until set, about 2 to 4 hours.
  • If desired, serve with sweetened whipped cream.
