Brown the Meat

  • Melt 1 stick of butter in a large Dutch oven over medium heat.
  • Add the ground beef, ground pork, and finely minced chicken gizzards and livers.
  • Cook until the meat is browned and no longer pink, stirring occasionally.

Saute the Vegetables

  • Stir in the yellow onions, green onions, bell pepper, celery, and garlic.
  • Continue to sauté the mixture until the vegetables become translucent and tender.

Add Seasonings and Liquid

  • Stir in the parsley, Worcestershire sauce, bay leaves, salt, black pepper, red pepper, and dried thyme.
  • Add 2 cups of chicken broth to the pot and mix well.

Simmer the Mixture

  • Bring the pot to a gentle simmer over medium heat.
  • Cook for approximately 25 minutes stirring often to prevent sticking.

Incorporate the Soup

  • After 25 minutes, stir in the cream of mushroom soup.
  • Continue cooking for an additional 30 minutes, stirring occasionally, allowing the flavors to meld.

Prepare the Rice

  • While the meat mixture is cooking, prepare (3 cups of dry rice) to make 6 cups of cooked rice according to standard preparation methods.

Combine and Steam

  • Once the rice is cooked, mix it thoroughly with the meat and vegetable mixture in the pot.
  • Cover the pot and allow the dirty rice to steam or cook on low heat for about 30 minutes.

Serve

  • Remove the bay leaves, taste for seasoning, and adjust salt as needed.
  • Serve the dirty rice hot and enjoy!
