Instructions

Make the Dressing

  • Add the honey, lime zest, lime juice, serrano pepper, olive oil, salt, and black pepper to a small bowl.
    2 tablespoons honey, 1 teaspoon lime zest, 2 tablespoons fresh lime juice, 1 serrano pepper, 2 tablespoons extra-virgin olive oil, ½ teaspoon kosher salt, ¼ teaspoon freshly ground black pepper
  • Whisk until the mixture is smooth and well blended.

Assemble the Salad

  • Place the watermelon, cucumber, mint, and basil in a large serving bowl.
    6 cups seedless watermelon, 2 cups English cucumber, 15 fresh mint leaves, 15 fresh basil leaves
  • Drizzle the dressing over the top.
  • Toss gently until the fruit and vegetables are evenly coated.

Serve

  • Sprinkle the feta over the salad.
    ½ cup crumbled feta cheese
  • Serve immediately or refrigerate for up to 30 minutes before serving for an extra-chilled salad.

Notes

  • For a milder dressing, remove the seeds and membranes from the serrano before mincing.
  • Persian cucumbers can be substituted for English cucumber.
  • If serving at a cookout or picnic, keep the salad chilled until ready to serve.
  • This salad pairs especially well with grilled chicken, grilled shrimp, pork tenderloin, burgers, and barbecue dishes.
  • Leftovers are best enjoyed the same day, as watermelon releases liquid as it sits.
