Instructions

  • Fill the Shaker
– Add ice to a cocktail shaker.
– Pour in the coconut rum, blue curaçao, pineapple juice, and lime juice.
– Shake well for about 15 seconds until chilled.
    1 ounce blue curaçao, 1½ ounces coconut rum, 1 ounce pineapple juice, ½ ounce fresh lime juice
  • Strain and Serve
– Strain into a chilled highball or hurricane glass filled with fresh ice.
– Top and stir in ginger beer for a little sparkle.
– Garnish with a lime wheel.
    2-3 ounces ginger beer

Notes

  • Make it frozen: Blend all ingredients with a cup of ice for a slushy version.
  • Swap the rum: Use white rum if you prefer less coconut flavor.
  • Hosting a party? Multiply everything by 6 and serve in a pitcher with lime slices floating on top. (Stir in the ginger beer right before serving.)
