Instructions

Make the Dressing

  1. Add the honey, lime zest, lime juice, serrano pepper, olive oil, salt, and black pepper to a small bowl.
  2. Whisk until the mixture is smooth and well blended.

Assemble the Salad

  1. Place the watermelon, cucumber, mint, and basil in a large serving bowl.
  2. Drizzle the dressing over the top.
  3. Toss gently until the fruit and vegetables are evenly coated.

Serve

  1. Sprinkle the feta over the salad.
  2. Serve immediately or refrigerate for up to 30 minutes before serving for an extra-chilled salad.

Notes

  • For a milder dressing, remove the seeds and membranes from the serrano before mincing.
  • Persian cucumbers can be substituted for English cucumber.
  • If serving at a cookout or picnic, keep the salad chilled until ready to serve.
  • This salad pairs especially well with grilled chicken, grilled shrimp, pork tenderloin, burgers, and barbecue dishes.
  • Leftovers are best enjoyed the same day, as watermelon releases liquid as it sits.
