Cheese Snaps

Ingredients

  • 2 sticks salted butter softened
  • 8 ounces sharp cheddar grated
  • 2 cups all purpose flour
  • 1 teaspoon sugar
  • ¼ teaspoon kosher salt
  • ¼ teaspoon cayenne pepper
  • 2 cups Rice Krispies cereal

Instructions

  • Preheat oven to 350 degrees.
  • Using an electric stand mixer with a paddle attachment, mix butter and cheese until creamed together.
  • In a separate bowl, whisk together dry ingredients.
  • Add dry ingredients to the to cheese mixture and mix to just combine – no floury lumps.
  • Remove bowl from stand and fold in Rice Krispies until well combined.
  • Using a small cookie scoop, portion out “cookies” and roll them into balls.
  • Place balls onto ungreased cookie sheets and press with the bottom of a floured glass or fork into flat wafers.
  • Bake at 350 degrees for about 20 minutes or until the edges are light golden brown.
