1 tablespoon olive oil
1 pound extra lean ground sirloin
2 (8-ounce) packages presliced cremini mushrooms, finely chopped
1 cup chopped onion
1/2 cup chopped green bell pepper
3 garlic cloves, minced
2 teaspoons prepared yellow mustard
1 tablespoon red wine vinegar
2 tablespoons Worcestershire sauce
1 ½ cups ketchup
2 tablespoons brown sugar
1/4 teaspoon salt
3/4 teaspoon freshly ground black pepper
1/2 teaspoon hot sauce, optional
4 whole wheat hamburger buns, toasted
Heat a large nonstick skillet over medium-high heat. Add oil; swirl to coat. Add beef; cook until browned, stirring to crumble.
While beef cooks, place mushrooms in a food processor; pulse until finely chopped, but not mushy. Add mushrooms, onion, bell pepper and garlic to pan; cook for 3 minutes or until onion is tender.
Drain off any excess liquid, but do not rinse.
Add remaining ingredients (except buns) to the pan and stir well to combine. Reduce heat and simmer for about 30 minutes, stirring occasionally.
Spoon about 1 cup beef mixture on bottom half of each bun; top with top halves of buns.
